Eggs

We are producing a lot of eggs right now. We wash and package 2dozen or so eggs a day and it amazes me at how each of them are just slightly different. Color, shape, size, speckles, and texture. All of them special. It makes it more enjoyable to wash all those eggs when they are nice to look at.

Those really are some pretty nice looking eggs and I love the colors. I can't believe you sutured your own bird, good job! If I ever have to do this I will know who to get advice from.

Nice looking eggs. You can google the FYI that you do not need to wash your eggs unless very dirty. The eggs are coated with an enzyme that prevents them for going bad. The enzymen keeps bacteria from growing on the egg and entering thru the shell. It is an evolution that took place by nature since the egg paces thru the same vent as the poop. If the enzyme is NOT washed off you can leave eggs out on the counter. If I have a dirty egg I take a dry cloth and buff if off unless it is in dire need of a washing. Just thought you might want to know. Because many of the old timers were aware of this they did not keep eggs in the fridge. Once washed they must be refridgerated.

Hey thanks Barbara! We usually dont wash them at all, but it has been so wet up here that the eggs are always dirty from other hens stepping on them when hey go to lay. During the summer we never have to wash them.
